Ingredients
- 50g Butter
- 1 Tsp Salt
- 2 Cups Plain Flour
- 3/4 Cup Milk
- Pulled Lamb
- 1 Tomato
- 1/2 Red Onion
- Plain Greek Yoghurt
- Mint Jelly
- Fetta (Crumbled)
- 1/2 Cucumber
Method
- Melt butter and milk in microwave until just melted.
- Combine the flour and salt then mix in the butter/milk mixture until a dough forms.
- Sprinkle work surface with flour then knead for a few minutes until it is smooth
- Wrap with cling wrap and rest at room temperature for 30 minutes or so.
- Dust bench top with flour, cut dough into 16 pieces, roll into balls, then roll out until very thin and round.
- Heat up an oiled skillet and place one flatbread in the pan, cook for around 1 – 1 1/2 minutes. Flip and cook the other side. There should be a smallish golden brown spots on both sides.
- Cook all the breads and allow to rest wrapped in foil.
- Dice up the tomatoes, cucumbers and onions. Crumble the fetta and set aside.
- Mix up a 1/4 cup of yoghurt and 2 Tbsp of mint jelly.
- Add lamb and vegetables and feta to the flat bread, top with a dollop of mint yoghurt and eat immediately!
