Ingredients
2 cups (400g) basmati rice
spray oil for cooking
500g chicken breast fillets, cut into cubes
1 medium (150g) onion, sliced
1 pkt MAGGI Favourites Butter Chicken Recipe Base
1/4 cup (60mL) water
1 tbsp tomato paste
375mL can CARNATION Light & Creamy Coconut Flavoured Cooking Milk
1 cup (250mL) chicken stock
2 tsp brown sugar
300g sweet potato, diced
200g snow peas, halved
1 bunch asparagus, sliced
50g flaked almonds, toasted
2 tbsp chopped coriander
Method
- Cook rice in a large saucepan of boiling water for about 12 minutes or until tender. drain well.
- Heat a non stick frying pan over high heat; spray with oil. add chicken in 2 batches; cook until browned. remove and keep warm.
- Add onion, MAGGI favourites butter chicken recipe base and water; cook over medium heat for 3 minutes or until onion is soft. stir in tomato paste, CARNATION light & creamy coconut flavoured cooking milk, stock, sugar and sweet potato; simmer, covered, for 10 minutes or until sweet potato is tender.
